Replace INCLUDES with AM_CPPFLAGS

Browse source 
newer automake gets quite noisy about this.
hw/xfree86/ddc/Makefile.am:7: warning:
'INCLUDES' is the old name for 'AM_CPPFLAGS' (or '*_CPPFLAGS')
and many more of these.
